White Bean & Mint Dip
- 1 can of White Beans
- 1/4 cup Mint leaves, finely chopped
- 1/2 Lemon, juiced
- 2 tbsp. OLiV Roasted Garlic Extra Virgin Olive Oil (EVOO)
- 1 tsp. OLiV Peppermint White Balsamic
- Salt and pepper to taste
- Water for blending
- Optional: Tortilla chips, pita or vegetables for dipping.
Add all ingredients into a blender or food processor.
- Add water if needed.
- Blend until smooth ( or consistency of your liking).
- Transfer to a bowl and finish off with another drizzle of EVOO and fresh mint. Enjoy!
